Traditional Peach Bellini
20ml white peach puree
15ml peach schnapps
Champagne or sparkling wine
Add puree and schnapps to champagne flute, top up with champagne or sparkling wine. Slowly stir to blend ingredients together.

Intermediate
Kiwi and Peach Caipiroska
30ml vodka
15ml peach liqueur
3 wedges of lime
3 sugar cubes
1/2 kiwi fruit (peeled)
In a boston shaker, muddle the kiwifruit and sugar cubes together. Add the remaining ingredients and shake. Pour into a tumbler glass and top with crushed ice. Garnish with a kiwi fruit wheel.

Expert
Molecular Siway
Tommy's Margarita:
60ml premium tequila
30ml fresh lime juice
15ml agave syrup
Add all ingredients in a boston shaker, shake well and strain into a margarita glass.
Molecular Foam:
150ml mango puree
150ml mango liqueur
150ml lime juice
1 red chilli
5g of fresh corriander
Add all into a blender, and blend well. Pour into your cannister, add 150ml egg white and gas. Shake cannister for 2 minutes upside down.
Pour the molecular foam on top of the Tommy's Margarita. Garnish with a red chilli and coriander leaf.
